This refreshing salsa makes for an excellent dish to share at summer parties and get-togethers!

We’ve been having a BEAUTIFUL one in Minnesota. It’s barely rained and the sun’s been shining all day every day. It doesn’t get much better than that. Actually, it does….when you add salsa to the mix!
I’m a sucker for salsa. Especially when there are tortilla chips and guacamole involved. Not only do I looooooove it, I love trying different varieties, especially those that are made with fruit! I’ve tried pineapple salsa, peach salsa, strawberry salsa, etc. but I’ve never had apricot salsa (up until when I made this recipe). When I got my hands on some apricots at Trader Joe’s, I just HAD to use them to make salsa…because why not?!
Apricots are SUPER healthy. They provide you with immune-boosting vitamin A and C, in addition to some vitamin E, vitamin K and B vitamins. They’re also high in potassium & several trace minerals. Overall, they contain over 15 vitamins and minerals, which is incredible. Who doesn’t love nutrients?! Oh, and can’t forget about the fiber, which keeps you full AND helps your digestive system run smoothly. A cup of sliced apricots has 3 grams of fiber!
What’s more, apricots have been shown to have anti-inflammatory properties, which is likely due to the antioxidants they contain. This means that eating them (along with lots of other veggies and fruits) on a regular basis may protect your cells from damaging free radicals, and hence reduce your risk of developing chronic illnesses like heart disease, cancer and diabetes.
Now that I’m done ranting about the health benefits of apricots, I want you to know that this apricot salsa is easy peasy to make. I think I say that for all of my recipes, but really, it only takes 20 minutes to put it together and requires no cooking at all! Just chopping, mixing and eating.
Apricot salsa would pair really nicely with my Berry Kombucha Cocktail! Or, you could eat it along with Spring Broccoli Salad, which is another great dish for bringing to grill-outs and pool parties 🙂
Let’s talk quick about CHIPS! When I made this apricot salsa, I paired it with Beanitos Bean Chips. I like these because they only have a few simple ingredients: Whole Navy Beans, Pure Sunflower Oil, Long Grain Rice, and Sea Salt. - 1 large cucumber, diced
- 1 medium bell pepper (I used an orange one for an extra pop of color!), diced
- 1 medium tomato, diced
- ½ cup onion, diced
- 5 small apricots, chopped
- ½ cup strawberries, chopped
- ½ tsp fresh garlic (or garlic powder)
- Dash of salt
- Cilantro for garnish
- Combine all of the ingredients in a large bowl.
- Mix well, until the chopped veggies and fruits are incorporated with the garlic and salt.
- Top with cilantro for garnish.
- Add more seasonings and spices, if you wish!
- Pair with tortilla chips, cucumber slices or avocado. Salsa tastes great with just about any dish.
