Roasted nuts make for a delicious crunchy snack, and are sure to please your party guests!
I hope you all had a really great weekend. Why do weekends have to go by so fast?
Mine was spent 1) celebrating mine & Joe’s 11-year anniversary, 2) putting together new recipes & blog posts for you guys!, 3) cuddling with Winston on the couch while catching up on The Bachelorrette (no shame) and 4) WATCHING THE VIKINGS WIN ON SUNDAY (did that actually happen?!!? oh, and did you guys catch the purple & yellow smoothie I posted?!).
Speaking of football, these roasted nuts make the perfect snack/appetizer for upcoming Superbowl parties. They’re a bit healthier than your typical Superbowl foods, with a dose of fiber, protein and healthy fats. The combination of honey + lime + spices adds a sweet & spicy kick. Warning: these roasted nuts are hard to put down!
You can also enjoy roasted nuts as a healthy snack. After making this recipe, I divided it into several single-size portions (1/4 cup each) so that I can enjoy the nuts as a snack whenever I want!

- 2½ cups cashews
- 1 cup pistachios
- 1 cup walnuts
- 2 tbsp olive oil
- Juice from 1 lime
- ¼ cup honey
- ½ tsp salt
- 1 tsp chili powder
- ½ tsp paprika
- Preheat oven to 350 degrees F.
- In a medium bowl, combine olive oil, lime juice, honey, salt, chili powder and paprika.
- Spread nuts out on an oiled baking sheet.
- Drizzle the olive oil/lime/honey mixture over the nuts.
- Place in the oven for 15-20 minutes, until crispy.
- Let the nuts cool, then enjoy!
