Lemon Spicy Rice

I’m all about keeping it simple.  At this point in my life, I don’t have time or patience to make beautiful gourmet meals.  But want to know what I DO have time for?  Rice.  It’s easy to make.  It’s quick.  It’s not all that rich in nutrients, but you can add things like veggies and spices to make it more nutritious.  

What you need: Rice (white or brown), fresh lemon juice, almond milk, and Trader Joe’s chili-lime spice! 

I wasn’t quite sure what to call this recipe, but went with lemon spicy rice because it has a little kick to it.  If you don’t already have Trader Joe’s chili-lime spice, I recommend that you go get it immediately!  And if you can’t do that, simply make it with some chili powder and lime juice.

You can top your rice with whatever you would like.  On the day that I made this, I had just finished making homemade salsa.  So that’s what I topped it with, along with some avocado!  Yum!

To increase the protein, add some meat!  Chicken, pork…even eggs taste great with rice.  If you’re a vegetarian, add some beans or lentils.
